Puff pastries with goat cheese, olives and prosciutto

Soignon ripened goat log 150g
- 1 cup olives
- 1 sheet puff pastry
- 225 g goat cheese
- 2 tbsp spicy honey + extra for drizzling
- 2 tbsp olive oil
- 6 slices prosciutto
- 1 egg
- 1 tbsp water
- Fresh thyme

Preheat the oven to 220°C.

Lightly flour the puff pastry and unfold it. Keep it slightly chilled for easier handling.

Cut into 15 squares and place them on a greased baking sheet. Score a 0.5 cm border around each square without cutting all the way through. Prick the center with a fork.

Mix goat cheese, spicy honey and olive oil until smooth. Spoon into the center of each square.

Top with torn prosciutto and 3 olives. Add a sprig of fresh thyme.

Beat the egg with water and brush the edges.

Bake for 15 minutes until golden brown.

Before serving, add extra thyme and a drizzle of spicy honey.
