Puff pastries with goat cheese, olives and prosciutto

Ingredients for 15 pastries

Melting texture
Ripened goat cheese log 150g, Made In Belgium

Soignon ripened goat log 150g

  • 1 cup olives
  • 1 sheet puff pastry
  • 225 g goat cheese
  • 2 tbsp spicy honey + extra for drizzling
  • 2 tbsp olive oil
  • 6 slices prosciutto
  • 1 egg
  • 1 tbsp water
  • Fresh thyme
  1. Preheat the oven to 220°C.

  2. Lightly flour the puff pastry and unfold it. Keep it slightly chilled for easier handling.

  3. Cut into 15 squares and place them on a greased baking sheet. Score a 0.5 cm border around each square without cutting all the way through. Prick the center with a fork.

  4. Mix goat cheese, spicy honey and olive oil until smooth. Spoon into the center of each square.

  5. Top with torn prosciutto and 3 olives. Add a sprig of fresh thyme.

  6. Beat the egg with water and brush the edges.

  7. Bake for 15 minutes until golden brown.

  8. Before serving, add extra thyme and a drizzle of spicy honey.
