Pasta with goat cheese and caramelized onions

- 4 onions
- 2 large garlic cloves, minced
- 3 tbsp extra virgin olive oil
- 1 tsp salt and pepper
- 1 tsp Worcestershire sauce
- 2 tbsp butter
- 1 tsp sugar
- 1 tbsp fresh thyme, chopped
- ½ cup white wine
- A handful of mushrooms
- Chili flakes for garnish
- 150 g ripened goat cheese
- Juice of 1 lemon
- 1 cup reserved pasta cooking water

Cook the pasta according to package instructions.

Finely slice the onions evenly.

Mince the garlic.

Heat olive oil in a pan and cook the onions for 20–25 minutes, stirring regularly.

Add salt, pepper, Worcestershire sauce, and butter, and cook for another 25 minutes.

Sprinkle the sugar over the onions.

Once the onions are nicely caramelized, add the garlic and fresh thyme.

Pour in the white wine and add the mushrooms.

Toss the cooked pasta in the pan with the goat cheese and add 1 cup of the reserved pasta water.

Stir in the lemon juice.

Garnish with chopped basil and chili flakes before serving.
