Preheat the oven to 210°C. Wash the apples, cut off the tops and carefully hollow them out.

Place them on a baking sheet. Mix honey, pine nuts, thyme, red currants and paprika. Fill the apples with this mixture and bake for 10 minutes.

Remove from oven and place a bacon-wrapped goat cheese on each apple. Return to oven for 5 more minutes. Meanwhile, toast the gingerbread slices.

Serve hot with mesclun salad and balsamic vinaigrette.

- 4 small apples
- 4 slices gingerbread
- 4 sprigs thyme
- 12 pine nuts
- 2 clusters red currants
- 1 tbsp honey
- 1 pinch hot paprika or cayenne pepper
