Roasted apples with goat cheese wrapped in bacon

Goat cheese wrapped in bacon

  • 1 package goat cheese wrapped in bacon
  • 4 small apples
  • 4 slices gingerbread
  • 4 sprigs thyme
  • 12 pine nuts
  • 2 clusters red currants
  • 1 tbsp honey
  • 1 pinch hot paprika or cayenne pepper
  1. Preheat the oven to 210°C. Wash the apples, cut off the tops and carefully hollow them out.

  2. Place them on a baking sheet. Mix honey, pine nuts, thyme, red currants and paprika. Fill the apples with this mixture and bake for 10 minutes.

  3. Remove from oven and place a bacon-wrapped goat cheese on each apple. Return to oven for 5 more minutes. Meanwhile, toast the gingerbread slices.

  4. Serve hot with mesclun salad and balsamic vinaigrette.
