Fresh goat cheese and spinach melt

Fresh goat cheese plain 150g

Soignon plain pyramid 150g

  • 8 slices of whole wheat sandwich bread
  • 150 g fresh goat cheese
  • 2 onions
  • 8 walnuts
  • 300 g baby spinach
  • Olive oil
  • Salt and pepper
  1. Peel and slice the onions.

  2. Heat a little bit of oil and sauté the onions over medium heat.

  3. Caramelize, then lower the heat and continue cooking for 15 minutes.

  4. In the meantime, heat some oil in another pan and cook the baby spinach over low heat. Season with salt and pepper.

  5. Spread some goat cheese on the slices of bread.

  6. Divide the spinach, onions and crushed walnuts among 4 of the slices.

  7. Close and cook in a panini press (or in the oven for 15 minutes at 180°C).
